How is the grey level chosen?
Each pixel's brightness is calculated from its red, green and blue values using the standard luma weights, so greens look lighter than blues, as to the eye.
Can I keep a little colour?
Yes. Lower the Strength slider to blend some of the original colour back in.
Is it reversible?
Keep your original; the converted file has no colour data to recover.
